El Salvador La ilusion Anaerobic Natural
An anaerobic natural produced by the Salaverria family in El Salvador. For this particular lot, cherries were fermented in tanks for approximately 80 hours.
La Ilusion is one of the smaller farms owned by the Salaverria family. Covering 10 hectares at an altitude of about 1540 masl, it is planted with traditional bourbon.
The producer employs innovative processing and farming techniques, separating cherries by picking days and using different fermentation and drying methods based on each lot’s potential.
